Left Over Turkey Delight!

Turkey, it’s still coming out of our ears! Thanksgiving is packing and on it’s way outta here, but your fridge still has the bird on display! Here is a FRESH spin on a salad sandwich. Or, eat it sans bread with a fork, as we do! Isn’t there something decadent about chicken salad? All the best lunch and brunch cafes will have a version. This one blew our minds with simple and easy ingredients. No turkey? Use chicken and it’ll be just as good!

Savory Turkey Salad

1 lb left over turkey, chopped

1 stalk of celery, diced

1/2 cup green pepper, diced

1/2 cup red onions – we used green

1/2 cup mayo

1/2 cup cried craberries

1/4 cup apple cider vinegar

salt and pepper

Super simple, just dice, measure and mix!
